Candied Ginger Biscuits
Really good, but they get hard and turn into a cookie really. Best warm and when paired with the Apple Butter.
1/2 c butter softened
1/3 c brown sugar
2 Tbsp molasses
1/4 c apple juice
2 c flour
1 Tbsp ground ginger
1/2 tsp baking soda
1/2 c finely minced candied ginger
Cream the butter and sugar, then beat in the molasses and the apple juice.
Sift the flour, ground ginger, and baking soda together. Stir into the butter mixture and then add the candied ginger. Wrap in plastic and refrigerate 1 hr.
Roll out the dough about 3/4" thick and cut into round. Bake for 15 min in a 350 oven.
*these make great dog biscuits. follow recipe but omit the candied ginger. you could replace the ginger with cooked liver or chicken.*
