Jazzed Rice

This rice is great tasting and easy to make. It is especially good when you are serving a spicy main dish, as the lime juice makes it refreshing and light. Enjoy!

2 c water
2 c chicken stock ( I use vege stock)
2 c white rice
1 c chopped cilantro
1/2 c chopped Italian parsley
4 tbsp minced garlic
1/4 c fresh lime juice
2 tbsp extra virgin olive oil
2 tsp fresh black pepper
salt to taste

Make your rice as you regularly would in rice cooker or in pan. Once cooked place in a bowl and separate with a fork. Add all the ingredients and mix to incorporate. Serve warm or at room temp.

A handful of toasted pinenuts might be good in it too.
