Mexican Wedding cakes / Tea cakes
These go in a hurry at a party. They are easy to make and quite tasty.
2 sticks unsalted butter, softened
1/2 c powdered sugar
1/2 tsp vanilla
2 c all purpose flour
1/8 tsp salt
2 c finely chopped walnuts or pecans ( I process 1 cup of each kind of nut)
1 1/2 c powdered sugar to roll cookies in
To make them into lemon tea cakes, omit the vanilla and add the zest of 1 lemon and 1 1/2 tsp lemon juice to the butter mixture.
Preheat oven to 350
Beat butter and the 1/2 c of powdered sugar until smooth. Add vanilla.
In a separate bowl mix flour, salt, and nuts. Gradually add to butter mixture.
Once combined roll the dough into 1" balls or larger. Place balls onto ungreased cookie sheets
Bake 15 min or until lightly browned
While still hot roll in the 1 1/2 c powdered sugar and place onto a cooling rack. Once cooled roll once again in the powdered sugar to coat and place on final serving plate.
