Diane's INCREDIBLE Oatmeal Cookies
Our neighbors gave us some cookies for Christmas, and they were soooo good that I asked Diane for her recipe. Diane made a batch and wrote everything she uses, since she doesn't go off of a recipe. They're really good. Enjoy!
Diane's Awesome Oatmeal Cookies
2 sticks unsalted butter softened
1 c firmly packed brown sugar
1/2 c sugar
2 eggs (beaten)
1 tsp vanilla
1 tsp baking soda
1 tsp cinnamon
1 1/2 c flour
3 c old fashioned oatmeal
2 c diced walnuts
2 c chocolate chips
1 c flake coconut
Preheat oven to 350
Beat together the butter, both sugars, eggs, vanilla, baking soda, and cinnamon.
Mix until smooth.
Add the flour and the oatmeal until well incorporated.
Add walnuts, coconut, and chocolate chips.
Drop tablespoon size balls onto ungreased cookie sheet.
Bake 10 to 12 mins.
Makes about 3 dozen.
