Horchata

I have some left over rice milk. Do you know how I can make horchata with it? Also, how do you make Thai iced tea?

You can probably fake it with a touch of almond extract and a bunch of cinnamon. Bear in mind that this is a big fake. I have made it by soaking rice, almonds and cinnamon overnight, grinding that all up and then straining several times. It then needs to be sweetened. You could also try soaking blanched almonds in the rice milk with some cinnamon in the fridge overnight, then putting it all in a food procesor or blender, and straining it. That would probably taste more authentic than the almond extract. Let us know how it turns out!

As for the Thai Iced Tea... You'll want to buy some Thai Tea blend, it's apparently a blend of red tea leaves, cinnimon, star anise, and others (or make the blend yourself). I've seen it in my Asian market, but never bought it. Depending on who you are talking to (or the recipe you find online) you add sugar and half and half, or sweetened condensed milk.
